We craft a wine that embodies the true spirit of Ribera del Duero — defying traditional clichés along the way

  • Fermentations

We carry out spontaneous fermentations in small tanks, driven entirely by native yeasts. The grapes are destemmed and placed in the tanks without being crushed and with no mechanical intervention. The fermentation unfolds slowly and gently, allowing for a long maceration with the skins that gives the wines a delicate yet fragrant character.

  • Barrels

Once the wine is finished, it is transferred into French oak barrels from different origins. Under the careful supervision of its creators, the porosity of the oak allows for controlled micro-oxygenation, which softens the tannins, stabilizes the color, and rounds out the wine. These barrels also host a second key process: malolactic fermentation.

  • Bottles

Our wines possess a profile that allows them to evolve positively over time. During bottle aging, the tannins, acidity, and alcohol gradually harmonize, softening the wine's edges. This results in a silkier texture and a more balanced profile. The wine undergoes a controlled evolution that enhances its finesse, aromatic complexity, and overall balance. We estimate that our wines can age gracefully for at least 10 years.
