The underlying limestone rock contributes minerality to the wines and prevents the roots from growing too deep. The soil composition varies between sand, clay, and stones.<\/p>\n<p class=\"translation-block\">One of our most prized vineyards is located in the <a href=\"https:\/\/www.demenciawine.com\/2021\/07\/19\/en-la-zona-mas-oriental-de-la-ribera-del-duero\/\" target=\"_self\" role=\"link\">El Corral<\/a> site in Soto de San Esteban, an elevated, very airy vineyard with a predominant north-facing orientation, featuring deep soils abundant in sand and white pebbles.<\/p>\n<h4>Harvest and Production.<\/h4>\n<p>The harvest took place on September 30th. The grapes were placed in a 1,500-liter stainless steel tank without the addition of sulfur dioxide. After five days of maceration with the skins, spontaneous fermentation began without adding selected yeasts. The total duration of fermentation and maceration, both before and after fermentation, lasted 15 days.<\/p>\n<h4>Maturation.<\/h4>\n<p class=\"translation-block\">We filled five French oak barrels with the resulting wine, retaining the presence of fine lees. Malolactic fermentation took place in spring 2021, after which the wine was racked. We keep the <a href=\"https:\/\/vinotaruguin.com\/en\/\" target=\"_self\" role=\"link\">wine<\/a> closely monitored with frequent tastings and checks, performing rackings as needed. The total aging period completed is 15 months.<\/p>\n<h4>Bottling.<\/h4>\n<p>La Cosecha So\u00f1ada was bottled on June 22, 2022, with a total production of 1,446 bottles.<\/p>\n<h4>Analysis.<\/h4>\n<p>\u2013 Uvas: 98% Tinto Fino &amp; 2% Albillo.<br \/>\n\u2013 Alcohol: 14.20%<br \/>\n\u2013 Acidez Vol\u00e1til: 0.80 g\/l<br \/>\n\u2013 Acidez Total: 5.30 g\/l \u00e1c. tart\u00e1rico<br \/>\n\u2013 pH: 3.82<br \/>\n\u2013 Sulfuroso: 36 mg\/l<br \/>\n\u2013 Az\u00facares: 1.50 g\/l<br \/>\n\u2013 \u00c1cido M\u00e1lico: &lt; 0.10 g\/l<\/p>\n<p>&nbsp;<\/p>\n<h4>Ingredients.<\/h4>\n<p>Grapes, antioxidant (Sulfur dioxide and <em><strong>SULFITES<\/strong><\/em>).<\/p>","protected":false},"excerpt":{"rendered":"<p>Produced with grapes from Soto de San Esteban, located in a high-altitude site known locally as El Corral, characterized by fresh breezes and a northeast orientation.
